The Item: Literally it’s a new month and so a new focus for us here at the Blog!! We are going to do a month of Muffins. Who doesn’t like muffins right! Where I great up – see if you can guess – home of the Red Sox, home of the Celtics, home of the beginning of the American Revolution – hummm where do you think that was? Well while you ponder that I’ll continue ~ growing up one of the standard stores was Jordan Marsh. You would go there like people go to Macy’s now a days – it had everything for back to school and special occasions and of course it had the bakery so while you shopped you could take a break with a cup of tea and a treat. One of their best known treats was their Blueberry Muffin – a tried and true recipe with an amazing taste. My good friend Adele reminded me of this – friends because of the military but we found out in the process we had grown up about 5 miles apart; Me in Melrose and She in Malden – seriously what a small world. Well anyway she sent me the recipe and I share it here with you today and will send a piece of home to our troops. To stretch the recipe so many could enjoy this little treat I made the muffins in mini-muffin cups and I’ll give you the timing for them below in process. Make these fabulous muffins today -and enjoy with a cup of tea ~ muffins aren’t just for breakfast!!
The Process: This recipe is well written and easy to follow. I did do a few things differently from the recipe and I’ll address them here. First and foremost I believe that canola oil is the best choice when an oil is called for instead of butter so consider using canola oil over standard vegetable oil. Then I creamed the butter, sugar, vanilla, eggs and milk all at once in the kitchenaide (Love My Kitchenaide) and then in a separate bowl I used a mesh strainer over the bowl and added all the dry ingredients in it, then using a whisk I slowly mixed as the ingredients went thru the mesh and combined nicely instead of using the electric beater method they explained. Remember we always sift our flour out so why not do all the ingredients at one time!! Then I added, in three sections, the dry ingredients to the wet, insuring I scraped the bowl twice so no ingredients collected on the bottom of the bowl. I chose this time not to do the blueberry mash but I know for a fact that it does enhance the blueberry flavor so it you have the time definitelytry it!! Then I used mini-muffin pans and paper linings (which you can get almost anywhere but if you are having an issue finding them the Party Store definitely had fun ones here in VA). Now when you use mini muffin pans the oven temperature remains the same but cooking will be between 10 and 14 minutes so you will need to check the status of the muffins. When the tops are lightly browned they are done! Also to fill the muffin cups neatly, I used my mechanical pastry bag – not that two teaspoons wouldn’t of worked just fine BUT for me this was the neatest method at my disposal. I cooled them completely and they are snug in freezer ziplocks waiting to be posted later today to Afghanistan. They are truly delicious!!
The Extra: By the time my Husband gets this box he will be celebrating his birthday. So I made a cake and then took a Chock Full Of Nuts large can, cut away the inner lip and cut out of the cakes layers which I stored in the can without any frosting. I bought frosting that I am sending in the package that he can put on the cake sections when he gets them – that way if the box gets held up and its hot the frosting won’t melt away and the whole thing becomes a huge mess. There are other birthday items in the box but since I want him to have some surprises – I’ll wait to share those until a later time!!
